Banana with Beef Stew / Ndizi Nyama
Story Behind The Recipe
Ndizi Nyama is one of my favorite dishes.
- 500 gms Beef steak with bones
- 1 medium Onion
- 3 cloves Garlic (crushed)
- Crushed Ginger
- 10 pieces medium size Bukoba bananas (peeled and halved)
- Coconut milk
- 2 medium tomatoes
- 1 medium Carrot
- Small bunch Coriander
Boil the meat with garlic, ginger, salt and pepper. Cook on low heat for 1 hour or until tender, drain and keep the stock.
In a separate pot, fry the onions for a few minutes, add the meat, carrots and tomatoes, then the boiled bananas (pre boil the bananas for 15 minutes), then add the stock, let it cook for 10 minutes, add coconut milk and cook for a further 15 minutes. Season to taste. Garnish with Coriander leaves and serve hot.
